Huai Shan Yao

Other Names: Tie Gun Shan Yao, Chinese Mountain Yam. 

You can find it in most Chinese supermarkets. There are usually two kinds of Shan yao. You want to get Huai Shan Yao or Tie Gun Shan Yao. It is more skinny and has darker skin compared to the regular Shan Yao.

Cooking and Preparation

Please peel the skin off. You might want to wear gloves while doing this. Otherwise your skin might get itchy.

Huai Shan Yao doesn't have much taste by itself. It tastes a little bit like a potato or a taro but can be crispier. You can cook it in different ways:

1. Boil it in lots of water, drink the water and eat the vegetable.

2. Steam it. Eat as it is or add a little honey or brown sugar.

3. Cut it into slices and throw it in whatever soup you are making.

4. Cut it into thin slices and saute with a little salt.

5. Make a desert out of it like you would with a taro or yam.
