Egg Recipes

Steamed Eggs

1. In a big bowl, add 2 eggs and 1/3 tsp salt and beat with a fork. Add ¾ cup of water and mix well.

2: (optional) Scrape some of the bubbles on the surface off with a fork.

3: Add some water (e.g. 2-3 cups) to a steamer. When water is boiling, place the bowl in the steamer and steam for 2 minutes on high heat.

4: Turn off the heat and leave the steamer covered for 8 mins.

5. Depending on your taste, add sesame oil and vinegar to the egg and serve. Or add soy sauce. You can even try a little pepper or a few slices of avocado.

Tea Eggs

Preparation Time: 2 minutes
Cook time: 20 minutes

Ingredients:

1. Water 3 cups, salt 2 tsp, brown sugar 2 tsp, light soy sauce 3 tbsp, dark soy sauce 2 tbsp, 1 anise, 2 cloves,  a few pieces of tea leaves.

2. 10 eggs, sesame oil.


1: In a medium pot, add eggs and enough water to cover them. Bring to boil on medium-high heat and reduce heat to low-medium for 3.5 - 4 minutes, depending on whether you want the eggs to be easy or medium.
2: Immediately discard the hot water and rinse the eggs with cold water for a few times until the eggs cool down. Remove egg shells and set aside.
3: Make the sauce: add everything in ingredients 1 into a pot, bring to a boil, reduce the heat, and simmer for 15 minutes.
4: When the sauce cools down, add a little bit sesame oil, add the eggs and let them soak for 24 hours before serving.
